SOURDOUGH - IT'S WORTH IT!
I have been making and enjoying sourdough for several years but am still always learning and finding out new things, it may sound like a cliché but it really is ..........a journey! (though sometimes more of a challenge!)
My Sourdough 'journey' has not until now warranted a whole page on the website however the latest development seems to have piqued peoples interest slightly so here is a bit more information.

Sourdough Cooking Crocks
I wanted to develop a cooking pot for my sourdoughs that would improve the steam element whilst cooking and therefore help with rise and the formation of a nice crust. I also wanted something that was easy to use with easy access. (I love a cast iron pot but getting in and out of a hot pan has caused many a burned wrist)
I was also conscious that I wanted something that looked nice and wouldn't offend my eye or look untidy whilst sat on the kitchen worktop, having something that could double up as a storage crock for the bread was an added interest.
After several attempts and various design alterations I have come up with a set that I am happy meets all my requirements.

After several attempts and various design alterations I have come up with a set that I am happy meets all my requirements.
The Sourdough Cooking Crock is handthrown on the wheel. It is made from terracotta which is fired up to 1 140C degrees.
The crock comprises of 2 separate pieces, a round flat base and a rounded dome with a large thrown knob for easy handling. The base has a spiral design to help alleviate the risk of a soft dough sticking. The dome has a nice rounded shape to allow for steam and dough rise! The crock is finished off with a carved design, just in case people don't know what its for! |
I am currently making the crocks in 3 different sizes, SMALL, MEDIUM & LARGE
Obviously bread sizes vary depending on peoples recipes, rise and success!
